Culinary and Hospitality
"Arepas" is a South American staple; arepas are a delicious street food (mainly found in Colombia & Venezuela) made from cornmeal, with a crispy outside & fluffy inside, and are commonly stuffed. Come learn how to make a classic Colombian-style arepa de queso, arepa de chorizo paired with aji (Colombian-style salsa) utilizing peppers from our SCC Culinary Garden. "Vegan Soups" will teach you to turn those beautiful fall vegetables into delicious, healthy vegan soups your whole family will enjoy. Make herbed potato leek soup and curried butternut squash soup using fall produce to take home. Also make rosemary vegan crackers to enjoy with your soup! "Jam and Water Bath Canning" will teach the basics of water bath canning while creating your own jam. Preserving the bounty of your garden will be a breeze! Join us as we make triple berry jam plus fig onion jam. Held Tuesday, September 17, from 5:30-7:30 pm, this class will cost $75.
In "Mexican Cuisine-Taquitos," we will learn how to make three different fillings and three different sauces for an all-time favorite treat: taquitos! These are stuffed, rolled tortillas that will be deep-fried to a golden crisp and are perfect for serving at any gathering, especially at fiestas. Held Tuesday, September 24, from 5:30-7:30 pm, this class will cost $75.
"Advanced Cake Decorating" is a two-day class in which you will learn how the bakers do it. On day 2, you will learn how to cut/layer/decorate a 6” celebration cake that we will turn into a beautiful vintage-style cake complete with buttercream roses. Held Monday and Tuesday, September 30 and October 1, from 5-7 pm, this class will cost $125.

"Microsoft Office Overview" will teach you to unlock the full potential of Microsoft Office and propel yourself to new heights with our comprehensive course designed for adult learners. In this dynamic and interactive program, you'll delve into the core applications of Word, Excel, PowerPoint, Outlook, Publisher, and OneNote, gaining invaluable skills essential for success in today's professional and personal settings. "Windows Basics" will give you the essential skills to maximize your productivity and enjoyment with Windows, whether for professional or personal use. This course is designed to empower you with the knowledge and proficiency to harness the full potential of this robust operating system. From personalizing your desktop to efficiently managing files and folders and navigating the internet with the innovative Microsoft Edge browser, you'll gain the confidence and expertise to leverage Windows Basics to its fullest extent. Held on Tuesdays and Thursdays, September 5-October 17, from 6-8 pm, this class will cost $75. There will be no class on October 15.
"Adobe Acrobat" teaches students the fundamentals of creating and editing PDF documents with Adobe Acrobat DC Pro. Students will learn to efficiently navigate the interface, utilize tools and menus, and customize preferences. Additionally, they will master various methods for creating PDFs and merging multiple files. The course also includes instructions on navigating, searching, bookmarking, and linking within PDFs. Students will gain expertise in commenting, reviewing, editing text and images, and manipulating pages. "Palette Perfection: An Oil Painting Journey with Harry Neely" will explore the craft of painting—painting like you see. We will look at contemporary, award-winning artists for similarities that we can use. We will look at palettes, preparation, color mixing, edge control, and tips from today’s leaders. You can practice these tips and put them to use in your class paintings. Join us for four weeks of exploration and fun. Held Tuesdays, September 10-October 1, from 1-3 pm, this class will cost $75.
In "Beginner Card Making," you will learn step-by-step instructions for creating themed cards. We use card kits, stamps with coordinating dies, paper, and ink to create. You will also learn new crafting products along the way. We love card-making and can’t wait to share our experience with you. Start from scratch and let your inspiration flow. In "North/South Cinema," students will join Professor Glenda Pope—Southern Culture Sophisticate—and Ron Layne—Northern Vagabond—as they take a peripatetic five-week film journey across the Mason-Dixon divide. The five films will highlight the unique perspectives of a Yankee/Rebel approach to life that now dwindles as accents, cadence, and rhythms of life continue to merge, leaving behind a once polar dichotomy of living. Held Tuesdays, September 17-October 15, from 2-4:30 pm, this class will cost $35.
Fitness
"Vinyasa Flow Yoga" will build flexibility, strength, and balance in your body and mind and decrease unhealthy stress responses in everyday life. Grounding and centering techniques will be incorporated. Comprehensive instruction will help students find body alignment and meditative practice matching breath to movement. All levels are welcome. Please bring a yoga mat. Held Mondays, Wednesdays, and Fridays, September 11-December 13, from 9-10 am, this class will cost $296. There will be no class on October 14, November 11, 27, and 29.
"Pickleball for Beginners" course covers the fundamentals of pickleball. Emphasis is placed on the basics of serving, ground strokes (drives, drops, dinks, punches, and lobs), overhead strokes (smashes and slams), and the rules and strategies of singles and doubles play. Upon completion, students should be able to apply these skills in pickleball-playing situations. For safety, please wear comfortable shoes, such as Tennis shoes. Bring your own paddle. Held Tuesdays and Thursdays, September 10-November 5, from 3:30-4:30 pm, this class will cost $160. There will be no class held on October 15.
"Intermediate Pickleball" focuses on refining techniques, mastering advanced shots, and developing basic strategy and gameplay. Through focused drilling, students will enhance their skills, learn the rules, and practice partnering for matches. Starting Saturday, September 21, round-robin games will be scheduled every two weeks, allowing students to play as teams and apply what they've learned. Each player will receive an individual assessment to highlight strengths and areas for improvement. Please bring your own paddle. The prerequisite for this course is the successful completion of a Beginner Pickleball class or previous experience. In "The Art of Digital Photography with iPhones," you will become skilled with the use of your iPhone camera and use the best photo apps available. Learn how to take and edit photos and troubleshoot the most common issues. The class will cover the principles of photography, the art of composition, how to find great lighting and advanced techniques. Classes will consist of lectures, demonstrations, critiques, and discussions. Photo walks to nearby places will also be part of the class, allowing students to apply lessons.
